Pranzo Italiano – Italian Theme Lunch: A unique culinary and fine-dining experience

The Department of Hotel Management organized Pranzo Italiano, a professionally curated academic culinary event designed to provide experiential learning in international cuisine through a unique fine dining and theme lunch experience. The event was conceptualized to immerse students in the art of Italian gastronomy while giving invited guests an authentic and elegant restaurant-style dining experience inspired by traditional Italian hospitality.

As part of the event, students were actively involved in the complete planning and execution process, including theme conceptualization, menu engineering, ingredient selection, food costing, kitchen mise-en-place, production scheduling, service sequencing, table layout, décor coordination, guest handling, and quality control. This practical exposure enabled students to understand how professional food and beverage operations are managed in real hospitality environments.

Students researched and prepared a range of authentic Italian delicacies using classical techniques and premium ingredients. Emphasis was placed on freshness, balance of flavors, texture, aroma, and visual presentation. They gained hands-on learning in pasta preparation, sauces, breads, appetizers, desserts, live cooking methods, portion control, garnishing, and modern plating aesthetics commonly followed in upscale dining establishments.

The event also recreated a refined fine dining service environment, where students practiced formal service standards, guest interaction, menu explanation, order coordination, etiquette, and hospitality professionalism. Guests experienced a thoughtfully designed international culinary journey with curated dishes, elegant ambiance, and personalized service. This helped students develop confidence in service excellence and customer engagement.

Through this event, students significantly enhanced their culinary creativity, teamwork, leadership, communication, time management, and problem-solving abilities. Pranzo Italiano successfully blended academic learning with practical industry exposure, giving students a deeper understanding of global gastronomy, restaurant operations, and international hospitality standards.
